Özet

Moisture sorption behaviour of cellulose based edible films was investigated. Methyl cellulose and varying amounts of polyethylene glycol-400 (PEG) were used in preparation of films. Moisture sorption isotherms of these films were derived at 10 degrees C and 25 degrees C. It was found that equilibrium moisture contents of edible films are very low at low water activities and increase sharply above the water activity of about 0.8. In the higher water activity region, the moisture content was found to increase with increasing PEG content of the films. The results were tried to be correlated with the water vapour permeability of films. Heat of sorption for the films at some selected moisture contents were also calculated and presented in graphical form.
