Solution Behavior of p-Coumaric, Caffeic and Ferulic Acids in Methanol as Determined from Volumetric Properties: Attempts to Explore a Correlation with Antioxidant Activities

Özet

Apparent molar volumes (V (I center dot) ) and isentropic compressions (K (S,I center dot) ) of three antioxidant compounds, p-coumaric, caffeic and ferulic acids, were determined from accurately measured densities and speeds of sound in methanol at (283.15, 288.15, 293.15, 298.15, 303.15 and 308.15) K. Infinite dilution values of V (I center dot) and K (S,I center dot) were obtained, as and , by an extrapolation procedure. Apparent molar isobaric expansions at infinite dilution (E (I center dot) (o) ) were also evaluated for the same systems. The variation of with temperature is discussed in terms of strength of interactions between the antioxidant compounds and methanol. values for the three antioxidant compounds in water at 298.15 K were estimated from group contributions assuming the validity of an additivity rule and are compared with experimentally obtained values in methanol at 298.15 K. Possible correlations between the antioxidant activity of p-coumaric, caffeic and ferulic acids and their volumetric properties, and , are discussed.
